This Shrimp in Garlic Sauce recipe is quick, easy, and delicious. It uses only one pot, some knives, and a chopping board, and requires mainly staple ingredients. The special twist comes from the tasty scampi’s. If you are somewhere by the sea, this dish is perfect to make with fresh local scampi.

Prep time: 15 minutes
Cook time: 10 minutes
2 tablespoons butter
1 large shallot, finely diced
2 to 3 garlic bulbs, pressed or finely diced
3 tomatoes
250 g scampi
Three basil leaves, chopped
1 teaspoon of cayenne pepper
Salt and pepper to taste
1 cup Rucola
2 tablespoons olive oil
1 tablespoon of red wine vinegar
Salt and pepper to taste
Serve with bread, pasta or rice.
