We asked our chef, Reggi from Herdewijn Homecooking to share a recipe perfect for the summer. He came back to us with the most exceptional dish. This Shrimp in Garlic Sauce recipe is quick, easy, and delicious. It uses only one pot, some knives, and a chopping board, and requires mainly staple ingredients. The special twist comes from the tasty scampi’s. If you are somewhere by the sea, this dish is perfect to make with fresh local scampi.

Shrimps in Garlic Sauce Recipe

For two persons

Prep time: 15 minutes

Cook time: 10 minutes

Ingredients:

Shrimps in Garlic Sauce

2 tablespoons butter

1 large shallot, finely diced

2 to 3 garlic bulbs, pressed or finely diced

3 tomatoes

250 g scampi

Three basil leaves, chopped

1 teaspoon of cayenne pepper

Salt and pepper to taste

Garnish

1 cup Rucola

2 tablespoons olive oil

1 tablespoon of red wine vinegar

Salt and pepper to taste

Serve with bread, pasta or rice.

Steps:

  1. Place a medium sized pot on the induction stove on medium heat (level 4).
  2. Add the butter, shallots, garlic, and tomatoes to the pot.
  3. Allow to warm up for about one minute, mixing every few seconds.
  4. After one minute, add the scampi. Now turn on the heat to the max (level 9). Add a dash of salt and pepper.
  5. Keep stirring the mixture every 20-30 seconds with a spoon to avoid sticking to the bottom. Let the mixture cook for about 4-5 minutes, or until the scampi is cooked.
  6. Meanwhile combine the olive oil and red wine vinegar in a small bowl. Place the rucola in a mixing pot and pour the olive vinegar mixture to the rucola. Add salt and pepper to taste.
  7. Once the scampi is cooked, taste and add salt and pepper if needed.
  8. Plate the scampi and divide the rucola mixture on each plate. Add bread to the plate and enjoy!
